Gluten Free Snicker doodles
"the best snicker doodle you've ever had"
1 cup butter
1 and 1/2 cup sugar
2 eggs
2 tsp cream of tartar
1 tsp baking soda
1 tsp salt
3 cups unflour*
Cream butter and sugar in a mixing bowl.
Add eggs one at a time.
Add cream of tartar, baking soda, and salt. Mix well.
Add in the flour. Scrape sides as you go.
Pop the bowl of dough into the refrigerator for 15 min.
Roll into balls and roll in a 1/4 cup sugar and 1 tbls cinnamon mixture.
Keep the dough in the refrigerator in between batches.
Cook for 10 minutes on 375.

My beautiful friend Melynda, who passed away in 2 years ago, gave me this recipe. She was always bright and happy. She was stylish and made her own clothes. She had three beautiful daughters and a testimony of Christ that you could feel through her smile.
When I became allergic to wheat during my pregnancies she brought me over banana bread... like the best banana bread EVER. Even compared to loaves in my wheat eating days!
She said she made a recipe for "unfour" it was a gluten free flour that you could substitute in any recipe.
So here it is:
Melynda Thompson's Unflour
3 cups rice flour
2 1/2 cups of cornstarch
1 1/2 cup of tapioca flour
mix well
When baking add 1 tsp. of xanthan gum for every cup of unflour used.
